    Founder at Blue Turaco Coffee - Championing Ugandan Specialty Robusta: Making coffee accessible, empowering small-holder coffee farmers, and fighting childhood hunger through coffee and wildlife safaris

    You won't believe this, but I met him face to face. Yes, we even had filter coffee together. Last Friday was a huge day for me, one that has been five years in the making. The week had started off with some disappointing news about the cancellation of the Birmingham Coffee Festival. I was going to give a talk there on the specialty robusta revolution. So you can imagine my excitement when James Hoffmann said yes to meeting on Friday the 5th. I went into overdrive with excitement. And for a good reasons For those into tech, your dream person to meet might be Elon Musk or Mark Zuckerberg. For me, there are a few legends in the specialty coffee world I’ve always wanted to meet, have a coffee with and talk about how we can change the coffee world together, for the better. Last Friday, I met one of them. A special, pinch-me moment. I was humbled and way too excited to meet you, James Hoffmann Thank you, Barney😜 Mauleverer for making this happen (more on this another time). I’m an outsider in the UK coffee scene; I’m a smallholder farmer (you don’t get many of those living this side of the equator), and I’m championing specialty robusta (when the specialty coffee market has been focused on arabica - for better part of last 3 decades. So, there are a few people in this industry I am keen to meet. People like you, yes you have an important key part in helping more customers access specialty and premium robusta and myself and BLUE TURACO COFFEE team are eager to make this happen. This, in turn, will impact millions of smallholder coffee farmers in Uganda and world over. No-one gets anywhere alone. Collaboration is what we need - in fact it could be the BIGGEST single thing to Make the biggest difference! So I’ll be reaching out. I hear your fears and worries, but I have a solution to those worries and fears. If you see my name in your DMs, it means you mean something to the robusta revolution. James, I learned so much during our chat, and I can't wait to meet again and again. Thank you.. You turned what was looking like a challenging week into a great one.     Please let me win 🤞 When we do events, we have started playing a game. Wycliffe puts coffee beans into a jar - counting them. His daughter makes sure he has counted correctly. We take the jar to the event. And you guess how many coffee beans are in there. The closest guess wins a load of coffee and a very cute coffee maker. This was a note on the back of one person's entry at our last event. There were several things to look at on our stand. (free samples, packs of coffee, coffee machines) There were several people to look at too. But all eyes went to this poster first. There were different approaches to winning this game; Some made wild guesses. Others tried to count the layers. Others tried to gauge the weight (we were impressed the most by these people) At the heart of it, we are all the same. We are all a bit competitive. We all like a bit of fun.     What's Friday without some honey? We have been breaking down coffee speak - starting with coffee processing. The part that happens once juice coffee cherries are picked from the trees. Here is a summary of the three main processes, including honey. Blue Turaco Coffee currently uses Natural and Washed coffees but Wycliffe is working with fellow smallholder farmers on Honey too.... for those that like a bit of both.     Coffee Speak continued.... Processing >>> RECAP: There are 3 main processes for doing this: 🍒 Natural process 🌊 Washed process 🍯 Honey process Today, it's time for a wash. When you see “Washed Process” on coffee packets, this is what that means: Once coffee cherries are picked and sorted, they need to be dried. >>You can dry them as they are (Natural) or you can take the outer skin off. When you take the outer skin off, you have another choice. >> Do you give the cherry a wash or not? In Washed coffee, you take the skin off AND you give it a wash. HERES'S MORE: There are juicy layers and sugars in a coffee cherry between the outer skin and the seed or bean. Once you’ve taken the skin off your coffee cherry, you’ll see them. They have a special name - mucilage. This is the bit you wash off in Washed processing. Once the skin and sugars are off the cherry, the cherry is called Coffee Parchment. 🌊 Coffee parchments are soaked in water for 24 hours 🚿 Rinsed well in fresh water ☀ Dried in the sun and natural air Tah dah... Washed process done. What we love about Washed coffees: 💙 The taste! 💙 Cleaner, brighter, fruitier (less body than Natural coffee) Washed coffee processing has one big drawback; it uses a lot of water which could be a scarce resource in some villages. So we combine processes and are experimenting all the time with new ones that use less water. Blue Turaco Coffee uses a mix of Natural and Washed coffees.     This week we break down Coffee Speak. Processing >>> This is the part that turns the coffee cherries that grow on trees into coffee beans we can roast (and then brew and drink). Once coffee cherries are picked and sorted, they need to be dried. There are 3 main processes for doing this: 🍒 Natural process 🌊 Washed process 🍯 Honey process We'll start with the oldest of them all - Natural. If you see “Natural process” on coffee, this is what it means: Coffee cherries are left to dry naturally, skin intact, in the sun. There are some lovely, juicy layers between the coffee skin and the coffee "seed" (which we know as the coffee "bean"), including some delicious sugars. When coffee is left to dry with its skin intact, the skin dries up in the sun and the sugars caramelise and intensify inside. (in Washed and Honey processing, the skin, or “pulp” is removed before drying. More on those next time) What we love about Natural Processing 💙 its the most affordable system for farmers 🧡 it conserves water the most 💛 it gives full-bodied, complex flavours. Blue Turaco Coffee uses a unique combination of Natural and Washed Coffee processes which is unusual in the world of Robusta. It’s part of why our coffee is strong, full-bodied and smooth.
