Coffee Speak continued.... Processing >>> RECAP: There are 3 main processes for doing this: 🍒 Natural process 🌊 Washed process 🍯 Honey process Today, it's time for a wash. When you see “Washed Process” on coffee packets, this is what that means: Once coffee cherries are picked and sorted, they need to be dried. >>You can dry them as they are (Natural) or you can take the outer skin off. When you take the outer skin off, you have another choice. >> Do you give the cherry a wash or not? In Washed coffee, you take the skin off AND you give it a wash. HERES'S MORE: There are juicy layers and sugars in a coffee cherry between the outer skin and the seed or bean. Once you’ve taken the skin off your coffee cherry, you’ll see them. They have a special name - mucilage. This is the bit you wash off in Washed processing. Once the skin and sugars are off the cherry, the cherry is called Coffee Parchment. 🌊 Coffee parchments are soaked in water for 24 hours 🚿 Rinsed well in fresh water ☀ Dried in the sun and natural air Tah dah... Washed process done. What we love about Washed coffees: 💙 The taste! 💙 Cleaner, brighter, fruitier (less body than Natural coffee) Washed coffee processing has one big drawback; it uses a lot of water which could be a scarce resource in some villages. So we combine processes and are experimenting all the time with new ones that use less water. Blue Turaco Coffee uses a mix of Natural and Washed coffees.
