Brad Makes A Multi-zone Campfire

Bon Appétit test kitchen manager, Brad Leone, is back with episode 9 of It's Alive. This time Brad takes his skills out of the kitchen and into the woods to teach you how to build the perfect campfire for cooking delicious food outdoors. Whether you're at a campground, backyard, or taking a quick day trip into the woods, Brad's setup lets you get creative and flex your outdoor culinary skills. Jesus!

Alright guys today on It's Alive

we're gonna do a little Special Edition

out of the kitchen where me and 'ol Vinny,

we went upstate.

(giggles)

Did some camping, made a nice little multi-zone fire.

Cookin' in the woods baby.

Perfect for cookin' on.

And we cooked some cool stuff other than

hamburgers and s'mores.

Look at that.

We're in the middle of the woods,

plate of this probably cost you $22.00.

Hope you brought your wallet Vin.

So let's go, zzoo.

Man down!

I'm gonna get fired.

(happy indie pop)

Huh ho!

Vinny bo binnie, look who showed up bud.

Don't worry, got all the hard work done already.

Gathered these rocks here for the fire pit.

Got some nice hardwood already split up.

I hiked it in.

We're not that far in the woods.

We come up here for the night, for the day.

You take a couple trips, couple loads.

No one said it was gonna be easy Vinny.

And what we're gonna do, we're gonna set up a little,

oh here let me put my beer down.

I picked this spot 'cause it's got excellent beer holders.

(cash register chings)

So what we have here Vinny,

I'm gonna start a fire back here.

Let it burn down.

'Cause we don't wanna cook over direct flames,

we wanna just cook over the coals.

[Whisper] If you cook it, he will come.

And this will be our charcoal factory.

And these'll be our cook zones okay?

(bossa nova music)

Once this burns down, I can scoop some coals,

bring them in here, bring them in here.

I got some grill pans over here and some wire racks.

Cast iron, perfect for camping, flat.

It's a little heavy but it's not that bad,

you throw it in the backpack with a couple other things.

I mean whatever, it's the heaviest thing you.

These little rocks I used as little levelers.

So I set this up like this.

And then I got little resting racks, or sheet trays.

So you can cook your vegetables on there,

it gets the smoke, it gets the flame, it gets the heat.

And then this can be for your solid sear,

if you wanna get a nice cast.

So we'll set that up, we'll get this fire going eh?

(bossa nova music)

So we're gonna make some kindling,

some good stuff to start the fire with.

Oh I can just see, Oh he's gonna cut his hand off!

Hope not.

(multiple punches to the face)

I know a guy who cut his thumb off doing this.

Not to go jinxing myself.

Hello.

(repetitive thumps)

We'll gather some twigs.

We'll build a little teepee action.

Now you don't wanna choke it,

you wanna make sure you get nice air flow.

Vinny, you got a lighter?

Oh I do.

Make sure you bring a little flame.

Unless you wanna get your flint or your magnifying glass.

Both reasonable options.

Big fan of teepee method.

Allows good air circulation.

And then we'll get this nice kindling we made.

And once this stuff is going,

then we're pretty rocking and rolling.

(bluesy guitar riff)

How you feel about that Vinny?

Oh yeah you don't really talk much.

Put a couple bigger logs on there,

get a nice bed of coals going.

This is pretty good size for cooking.

You don't need massive logs when you're

gonna be making fire.

That's great if you wanna sit around the fire

for five hours, roast marshmallows

and talk about better days and shit.

But we're not out here doing that right now,

we're trying to make a fire to cook on.

Maybe tonight Vinny, we'll go down

and get some larger ones and come back up

for the old campfire sit around.

We'll drink whisky and reminisce of, eh.

Probably just go to bed.

(bossa nova music)

Look at that little thing huh?

Man what a beauty.

Hoo!

Morel mushroom, found in the woods.

Not planned.

If that don't get you going, I can't help you.

That's the beauty of coming,

you ain't gonna find this in no campground,

I can tell you that much.

Well you might.

Slice that up, I'm gonna cook you a little steak Vinny.

We're gonna be doing alright.

(bossa nova music)

Fire burned down, we got a nice bed of coals here.

What I'm gonna do is shovel out these coals

and we'll make a nice little bed here.

Rake 'em in and that's gonna be the fuel for our cooking.

Nice and sturdy, put this little guy here.

Let that heat up a little bit and

I'll start prepping the meat.

Get that bone hot going.

So we got a little hot zone up here.

Little cooler over here for the veg.

This is plenty to sear.

If you wanna get a real hot spot,

I like to bring a French skillet

and you can place that right on the coals.

You don't wanna put that over flame.

If I were to put those steaks over the flame,

it'd just be way too hot.

And then you move things around.

It's not like you put things and that's it.

And in the back, we're putting more wood

to keep the coals up.

(meat sizzles)

Notice the little juices, good stuff, flavor bombs,

dripping onto the rock.

I mean I like the rock and all,

but I like me and Vinny better so

we're gonna let that drip into the mushrooms,

zucchini, let that get nicey nice.

We'll cut that up and get eating huh?

I've paid for worse, that's for sure.

Yeah, so got your little three zone fire.

Cooking good stuff in the woods.

Don't get much better than that huh?

(pan sizzles)

You might have saw me cooking some food

in this here cast iron, and you're gonna wonder

possibly how I was gonna clean this.

All's you need is since you have your fire,

a little steel wool.

Get it nice and hot.

Just a little rubby rub with the ol' steel wool.

Wipe it down with a little rag and

get back to cookin'.

(bossa nova music)

Ooh that looks good huh?

Little pilsner in there bud, huh?

Who's better than us Vinny?

Look at that.

Put that in your magazine Vin.

Oh yeah, we both work there.
