    Makes 4 to 6 servings

Ingredients

2 pounds beets (about 6 medium), trimmed, peeled, cut into 1" pieces
1 pound carrots (about 4 large), trimmed, peeled, cut into 1" pieces
1 Gala or Empire apple (about 8 ounces), cored, cut into 1" pieces
1 Granny smith apple (about 8 ounces), cored, cut into 1" pieces
1 3" piece fresh ginger, peeled, chopped into 1" pieces
3 tablespoons fresh lemon juice

Preparation

  1. Pass first 5 ingredients through a juicer. Strain through a fine-mesh sieve into a large bowl. Stir in lemon juice. Pour into glasses.

  • I made up 1 small beetroot (organic) 1 small apple (Gala) small Root Ginger and half a small punnet of blueberries with a splash of lemon . Great way to start the day

  • I make a similar juice, using only a couple of small beets, an apple, and a medium-sized carrot for a refreshing juice. And, the pulp left behind sometimes finds its way to be baked into a bread with some pumpkin seeds and grated cheese.   • I usually make this juice but with only one beet. I can't imagine 2 lbs of them -- one seems to be plenty to give it color and a little beet taste. Celery, parsnips and pear can easily be added to this to give it some variety.
