Chocolate Chip, Peanut Butter, and Banana Cookies

These yummy vegan cookies are free of butter, added sugar, and even eggs—the peanut butter and applesauce hold them together. But trust me when I say you won’t miss the sugar. The sweet banana and abundance of chocolate more than make up for it.

    Makes 24 cookies

Ingredients

3/4 cup all-purpose flour
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
1 banana, thinly sliced
2 tablespoons all-natural peanut butter
1/2 cup unsweetened applesauce
1 teaspoon pure vanilla extract
2 cups old-fashioned rolled oats
2/3 cup semisweet chocolate chips

Preparation

  1. Step 1

    Preheat the oven to 350°F. Line two baking sheets with parchment paper.

    Step 2

    In a medium bowl, whisk together the flour, salt, and baking soda. 3. In a large bowl, mash together the banana, peanut butter, applesauce, and vanilla with the back of a fork. Whisk in 1/3 cup water, scrape the sides, and mix well.

    Step 3

    Add the flour mixture to the banana mixture and stir together until just combined. Stir in the oats and chocolate chips.

    Step 4

    Use a small ice cream scoop or spoon to drop ping pong ball–size dollops of cookie dough onto the prepared baking sheets. They don’t spread much, so they only need 1/2 inch of space between the cookies. Bake for 10 minutes, or until lightly browned on the bottom. Let them cool on the baking sheet for 10 minutes before devouring. You can freeze baked cookies in a gallon-size freezer bag for up to 3 months.

  • Followed the recipe exactly and the cookies didn’t harden at all or spread out any. I used frozen bananas though so that might have contributed to the texture. This made storage and transportation difficult. The flavor was good but I probably won’t make them again.

  • I'm gluten free so these cookies looked like they would do the trick for those moments that I wanted something sweet and preferably chocolate. Although everyone who tried them liked them, me, my granddaughter, the neighbor kids and my daughter in law, they were not something that I really craved. I made my own applesauce since I live in the PNW and our apples are amazing and I had a banana I wanted to use before it went bad. I was surprised as to how forward the banana flavor was but not so much as to be overbearing. Okay cookie but not good enough to do again.

  • My cookies didi not spread at all. I ended with ping pong ball sized cookies. Not at all what I expected, and every thing was carefully weight and measured!!!!!

  • I always get a sweet tooth in the evening but ironically don't like snacks that are overly sweet. I made a batch of these as well as a normal batch of chocolate chip cookies and liked these way better. I am already looking forward to making them again.

  • I am just 6 days into the "Lose Weight by Eating" Detox plan and these little cookies were a lifesaver for this "recovering" sugar addict. If you don't anticipate they are going to taste like the ooey--gooey ultra sweet chocolate chip cookies your mom used to make - and realize they are a healthy, filling alternative that you don't have to feel guilty about having - you're well on your way! I'm looking forward to trying more recipes from this cookbook and hopefully kick my sugar habit and lose the 30# I'm struggling with.
