Andres, Fran, y Luis. The three amigos who created and run Kiltro. They are its heart and soul and you will find them working the bar, the kitchen, and the floor serving their guests with passion and panache.
It's not often that a place excels on both the food and beverage fronts with equal excellence. Kiltro pulls it off brilliantly.
The cocktails are sublime. The menu offers a mix of stellar originals and creative riffs on classic cocktails. Of course the barkeep can make or riff on any classic you like. There is a strong focus on Pisco, it being a classic spirit indigenous to Chile, which home of one of the founders. Pisco is far more versatile than the Pisco Sour familiar to most of us. A colorful array of house-infused Piscos lines the top shelf of the bar and serve as the foundation for many of the cocktails on the menu. It's worth noting that many of the components of the house cocktails are made in house, including a chipotle syrup that gives the Picaflor its heat.
The beautifully plated food options are all Latin American classics or inspired by by traditional dishes of the region, meticulously crafted with local ingredients from scratch in a tiny kitchen in the back of the restaurant. The ceviches in particular will rock your world, but all of the offerings will tempt your palate and are worthy of your consideration.
Plan to return many times to work you way through both menus; I guarantee you will not be disappointed. I am fortunate to live one block away and I visit almost daily.
