I received a lot of help from fellow Trip Advisor folks, so I wanted to pay it forward with our experience regarding our destination wedding at Sandos Caracol Eco-Resort and Spa.

I originally started looking for a place to have our Feb. 8, 2014 wedding around Jan. 2013. I created a spreadsheet, looked up *literally* every resort in Cancun, Cozumel, and Playa del Carmen, and recorded pros and cons. We landed on Sandos Caracol for a few reasons.
The first and foremost reason was Fernanda. She is the wedding coordinator at the resort. When I initially emailed the resort (as I had done with many others) for information, she responded immediately with the brochure and options. Throughout 2013, we communicated via email nonstop. She never made me feel like my questions were too numerous or overly ridiculous, and was as explanatory as she could be.
Please know that if you plan to do a destination wedding in Mexico, you really need to trust the wedding coordinator. Most things, you simply can not decide until you get there. To be sure, the brochure offers you packages and additional options (such as a DJ, cocktail party, etc...) However, you do not pick out flowers or cake flavors or menus until a few days before the ceremony. It works out beautifully though - trust - these people are EXPERTS. There were 4 additional wedding ceremonies in the days right before and right after ours was. They know what they are doing!
For our wedding, we had 42 guests come. We arrived three days prior to the ceremony. We met with Fernanda and Marine the day after we arrived to choose flowers, cake flavor, menu for the dinner (we chose an a la carte dinner at La Riviera - it was AMAZING), and settle the bill. There are some things you must pay cash for (beach fee, minister fee, and DJ that I know of) but everything else can be billed to your room to be paid when you check out.
The day of the wedding, a large golf cart came and picked us up from our room. The resort is quite huge so I'd have been sweating by the time I arrived if not for the nice little taxi! We had our ceremony, which was BEAUTIFULLY decorated. The minister kept the ceremony short and sweet, and we specifically opted for the symbolic, non-religious spiel. It was so perfect that afterwards, we had two different people ask us if we'd written our own vows! Then we had dinner at La Riviera, and then we walked right out onto the beach and had our reception/dance party. We paid extra for the cocktail party (which provided a dedicated bartender with an open bar) and or the DJ (who was wonderful).
If you need a photographer, go with PhotoPro onsite! Andrea (he's a guy, it's pronounced Andre) was outstanding. He made us do a lot of cheesy poses that we laughed about as we were doing them, and when we got the photos back, we were amazed at how gifted a photographer he is! We had our photos for review 2 days after the ceremony and the books and prints were ready within 72 hours. We also hired the videographer (Carlos) who was simply amazing. Our wedding video made me cry (and I'm not a sentimental gal!)
Our wedding guests came up to us at different times after the wedding and told us it was THE BEST WEDDING they had ever been to.
The resort itself gets 5 stars. If you have a large amount of people attending your wedding, this is the perfect spot. There are trails to hike and bike; cenotes to snorkel; watersports; volleyball; an aquapark for the kids; various food options; theatre shows every night; water Zumba; and so many other things we didn't even get to try. There are burros and Mexican dogs on site, as well as parrots that say "Hola!" to you as you walk by!
The bartenders are attentive and kind. The food is various and wonderfully made. I have no complaints whatsoever for this resort!
Be sure to make reservations to eat at the Brazilian restaurant. We never got to eat at the Japanese but we heard from many of our guests that it was so fun and so fantastic.
To sum up, whether you're having a wedding or just taking a family trip, this is the place for you. I would definitely stay at the Sandos resorts again (and I love me a tropical vacation, so they haven't seen the last of us!) and I look forward to our next vacation!
