It doesn't come out of a soft-serve machine, and you can't twist it, but our version of fro-yo wins at everything else.

    Makes 4 servings

Ingredients

2 cups plain whole-milk yogurt
1 1/2 cups simple syrup
1 teaspoon finely grated lime zest
3 tablespoons fresh lime juice
1/2 cup water in a medium bowl
seeds from 1/2 vanilla bean

Special Equipment:

Ice cream maker

Preparation

  1. Whisk 2 cups plain whole-milk yogurt, 1 1/2 cups simple syrup, 1 teaspoon finely grated lime zest, 3 tablespoons fresh lime juice, and 1/2 cup water in a medium bowl; scrape in seeds from 1/2 vanilla bean. Process in an ice cream maker according to manufacturer's instructions. Transfer to an airtight container; cover and freeze until firm, at least 2 hours.

Do ahead:

Sorbet can be made 2 weeks ahead. Keep frozen.

  • Super easy and delicious. I cut down on the sugar (3/4 cup) and paired it with a Lemon Blueberry Tart. I will definitely make it again.

  • This is delicious and super easy. Don't bother making a simple syrup on the stove-- just put 1 cup sugar and 1 cup water in a container with a lid and shake it up vigorously. It'll make exactly the 1 1/2 cups simple syrup you need for this. In my KitchenAid ice cream maker, I let it stir for 12 minutes... the end result was a little soft when scooping it out but we thought the texture was actually perfect for eating.
