Soufflé Espresso Martini

Put a twist on the classic espresso martini and add a whipped coffee topping. Like a soufflé, the airy, slightly sweet topping slowly rises as the espresso cocktail is poured into the glass, creating a stunning visual effect that will impress any guest. The cocktail is a little high in added sugar, so we recommend enjoying it on occasion for a dessert-like treat. If you don’t have an espresso maker, you can substitute strong brewed coffee.

Ingredients

  • 1/4 cup instant coffee

  • 2 tablespoons granulated sugar

  • 1/4 cup boiling water

  • 2 large egg whites (see Tip)

  • 1 teaspoon cocoa powder

  • Ice

  • 2 ounces coffee liqueur

  • 2 ounces freshly brewed espresso (1/4 cup)

  • 1 ounce vodka

  • 6 coffee beans for garnish (optional)

Directions

  1. Combine instant coffee and sugar in a heatproof medium bowl. Add boiling water; beat with an electric mixer on high speed until the mixture is thickened and very fluffy, about 3 minutes. Add egg whites and cocoa. Beat on high speed until the mixture holds its shape, about 5 minutes (the mixture will deflate first, and then it will get thicker). Divide between 2 coupe glasses and flatten the tops.

  2. Half-fill a cocktail shaker with ice. Add coffee liqueur, espresso and vodka. Cover and shake until chilled. Divide between the glasses, pouring through the middle of the whipped coffee mixture so it rises. Place 3 coffee beans on the foam of each cocktail for garnish, if desired.
