Shrubs (vinegar-based syrups) add sweetness and tang to cocktails and mocktails. Splash some in ice-cold seltzer to make a mocktail or make a boozy beverage with vodka.

Ingredients

Shrub

  • 1 cup strawberries, halved

  • 1 cup sugar

  • 1 cup cider vinegar

  • 1 (1 inch) strip lemon zest

Mocktail

  • 2 strawberries

  • 2 fresh basil leaves

  • 1 (1-inch) strip lemon zest

  • ¾ ounce Strawberry Shrub

  • 3 ice cubes

  • 5 ounces cold plain seltzer

Cocktail

  • 2 strawberries

  • 2 fresh bail leaves

  • 1 (1-inch) strip lemon zest

  • 1 ½ ounces vodka

  • ¾ ounces Strawberry Shrub

  • ¼ ounces Campari

  • 3 ice cubes, plus more for serving

  • 2 ounces cold plain seltzer

Directions

  1. To prepare the shrub: Combine strawberries, sugar, vinegar and lemon zest in a medium nonreactive saucepan. Bring to a boil over medium-high heat. Remove from heat and let stand for 20 minutes. Strain into an airtight heatproof container. Refrigerate until cold, about 4 hours.

  2. To prepare the mocktail: Muddle strawberries, basil and lemon zest in a cocktail shaker or pint jar with a tight-fitting lid until mashed and fragrant. Add Shrub and ice. Cover and shake until cold, about 30 seconds. Strain into a champagne flute and top with seltzer.

  3. To prepare the cocktail: Muddle strawberries, basil and lemon zest in a cocktail shaker or pint jar with a tight-fitting lid until mashed and fragrant. Add vodka, Shrub, Campari and ice. Cover and shake until cold, about 30 seconds. Strain into a glass of ice and top with seltzer.

Shrub can be stored in an air-tight container in the refrigerator for up to 1 week.
