Kardea Brown’s Chicken Pot Pies with Puff Pastry Are Equally Comforting and Stunning

We’re falling in love with these mini potpies.

The winter chill is here to stay, so we’ve been looking for the most comforting dishes to keep us cozy and satisfied on nights in. Think soups, casseroles and hearty dinners. It’s those vintage recipes that remind you of childhood, those soul-healing bites that transport you to simpler times. Chicken potpie is a prime example of comfort food, and Kardea Brown just posted a version that is checking off all of our boxes. 

On Instagram, the Delicious Miss Brown host shared her Curry Chicken Pot Pies that look as flavorful as they sound. She uses simple ingredients and adds her own personal twist on the classic dish— here’s what we love about Brown’s recipe. 

“Made seasoned boneless chicken, carrots, peas, potatoes [and] yellow curry, I wanted it a little creamier so I added coconut milk,” Brown describes in her Instagram post. “Topped it off with a flaky buttery puff pastry crust that I seasoned with Nori Komi Furikake rice seasoning.” Yum! 

Each individual potpie sports a gorgeous and gleaming puff pastry crust, and the melted butter Brown brushes on top of each makes them look even more perfect. When broken open, the delicious center of the pie is revealed, showing the veggies, chicken and yellow curry in all their glory. 

In Brown’s recipe, she incorporates 1 teaspoon curry powder in the fillings. That’s how the chef is able to achieve that golden color—we’re just trying to imagine the mouthwatering smells through the screen!
