Stanley Tucci Just Made Risotto with His Mom—and They Shared 4 Tips for the Perfect Dish

We know Stanley Tucci is a fan of risotto, sharing how to use up leftovers of the dish mere weeks ago. But what about enjoying it fresh?

In a recent Instagram video, Tucci shared the kitchen with his mom, Joan, as they whipped up Saffron Risotto with Mushrooms. While making the classic dish, they both provided their own cooking expertise throughout the video for us to note for later reference.

Side-by-side with his mom—and utilizing his new cookware line, of course—here are some of Tucci's tips for making the perfect risotto.

1. Make enough for leftovers!

Tucci was unsure of using all of the rice for the risotto, but his mom insisted since she doesn't like when there's "only a little left over." We agree with Joan here. When you're making something that's bound to be delicious, make sure you have enough to reheat the next day.

2. Salt the rice while it's cooking on the stove.

Having learned this technique in Italy, Tucci salted the cooking rice after white wine was added to the pan.

"Now you're salting the rice, not the risotto," Tucci explained with his mom agreeing. With the addition of cheese, the risotto should be salty enough once ready.

3. Add in your broth a little at a time.

Once the white wine is cooked down, it is time to add in the broth. Joan went in and added scoops of the warm broth cooking on the side to the pan of rice, stirring the rice before adding more. If you're unsure of what kind of broth to use, it really depends on your taste. Whatever you have on hand—reduced-sodium chicken broth, beef broth, no-chicken broth or vegetable broth—should do the trick.

4. Cover the risotto once off the heat.

Once the risotto is cooked and your add-ins are mixed through—the Tuccis stirred in some mushrooms—cover your pan or pot with a lid as you take it off the heat. Tucci throws in butter and cheese to melt on top while the risotto cools down. Once it's cool, it's ready to enjoy!
