“I don’t want [it] to be an Excel spreadsheet hotel,” says Pádraig McGillicuddy.

The third-generation proprietor of Ballygarry Estate is walking the property, passing fields freshly planted with 29,000 native trees, dipping into a new 5km walking and cycling loop that veers into Ballyseedy Woods, and explaining an integrated wetlands that uses a reed-bed filtration system to treat waste water.
