Leave it to Gjusta in Venice, CA, to create a produce-based, low-sugar, vegan-friendly, crowd-pleasing dessert. That would also be completely acceptable to eat for breakfast. To keep the recipe vegan, skip the heavy cream and consider making dairy-free coconut milk whipped cream instead.

Ingredients

2 large avocados, pits removed
1 vanilla bean, split lengthwise
¾ cup unsweetened cocoa powder
½ cup pure maple syrup
¼ cup agave nectar
¼ cup (or more) fresh orange juice
½ teaspoon kosher salt
1½ cups heavy cream (optional)
¼ cup cocoa nibs and/or chopped hazelnuts

Preparation

  1. Step 1

    Scoop avocado flesh into a blender and scrape in vanilla bean seeds; reserve pod for another use. Add cocoa powder, maple syrup, agave nectar, orange juice, and salt and blend to a coarse purée. With motor running, gradually stream in ¾ cup hot (but not boiling) water; blend, adding more orange juice as needed, until smooth and creamy.

    Step 2

    Divide pudding among eight 4–6 oz. ramekins or small bowls and chill (uncovered) at least 2 hours.

    Step 3

    Just before serving, whip cream in a medium bowl to soft peaks and spoon over pudding, if desired; top with cocoa nibs and/or hazelnuts.

  • Delicious! I eliminated the agave syrup; instead of OJ I substituted instant espresso dissolved in cold coffee....REALLY good!!!

  • Absolutely delicious… would never guess this was vegan made with avocado's!!!! Without doubt better than chocolate mousse made with aqua faba!

  • So delicious!! Very easy to make and everyone loved it. It is kind of rich, so the whipped cream helps with that. Also, cocoa nibs give it a great texture against the silky smooth pudding. Definitely making this again!!!

  • This was simply *amazing*. I followed the recipe exactly (not something I normally do ;)), and it turned out GREAT! Also, I don't have a blender, I made it in a NutriBullet, which worked out fine.

  • Big hit with my vegan friends and even my non-vegan husband thought it was delicious. This pudding is very reminiscent of the old-school jello chocolate pudding I remember eating as a kid. You really do not taste the avocado, but the consistency is perfect. I made this a second time and decided to melt 3/4 cup of dark chocolate chips in 3/4 cup of coconut creamer, whisking together until smooth, and then I added it in a slow steady stream right at the end. It definitely enhanced the consistency and chocolate flavor.

  • I've made this half a dozen times and it always gets rave reviews, from vegans and non-vegans alike. I made it with vanilla extract (1/2 t) yesterday because I ran out of vanilla beans, and it was still delicious.
