At 360 The Restaurant at the CN Tower, we craft cuisine that’s as spectacular—and Canadian—as our surroundings. Drawing inspiration from the many regions of the country, our culinary team creates menus that showcase local suppliers, flavours from coast to coast and wine from right here in Ontario.

Our sustainability story

The cuisine of Canada is intimately tied to the land and waters we call home. As those rivers, oceans, forests and farms keep us fed, we owe it to them to source ingredients responsibly wherever possible. Doing so not only helps us keep our emissions down and water use limited, it also leads to dishes that brim with seasonal personality and local character—good for the planet, delicious for you!

This conscious approach to cuisine has animated our kitchen’s creations for years and is the driving ethos of our food and beverage program.

Today, we’re one of Canada’s most sustainability focused restaurants. Beyond the ingredients we use in our kitchen, we have also installed an ORCA system, which uses natural processes to safely reduce food waste, and we’ve built a culinary garden at the base of the Tower to highlight the kinds of produce that grow right here in Ontario.

Angel Sevilla, Executive Chef

Angel Sevilla is a distinguished culinary professional and as the Executive Chef at 360 Restaurant, Angel brings a wealth of experience and innovation to his role.
 
Angel's culinary journey encompasses significant roles at prestigious establishments, including his tenure as the Executive Chef at One King West Hotel and The Shore Club, and most recently, Executive Chef/Director Food and Beverage at the Toronto Cricket Skating and Curling Club. His culinary prowess extends beyond the kitchen as he served as a Chef Instructor at Centennial College, where he imparted his knowledge and passion to aspiring chefs. A graduate of George Brown College, Angel holds a Diploma in Culinary Management and has achieved the esteemed Red Seal Certification, a testament to his mastery of culinary arts and dedication to excellence.

Beyond his culinary accomplishments, Angel is deeply committed to sustainability and supporting local communities. He actively seeks out partnerships with local Ontario farms, visiting them regularly to personally select the freshest and most sustainable ingredients for his dishes. His dedication to sourcing locally not only ensures the highest quality and flavor but also reduces the carbon footprint of 360’s offering.

With his diverse background, unwavering commitment to quality and sustainability as well as his innovative approach to cuisine, Angel Sevilla continues to elevate the Toronto culinary scene, delighting palates and inspiring culinary enthusiasts from all over the world.
 

Marc Dorfman, Director of Food and Beverage

Marc Dorfman has over 30 years of diverse experience in the hospitality industry and brings exceptional knowledge of the food and beverage and special events sectors to the CN Tower. As the Director of Food and Beverage, Marc leads a team at a strategic level with a keen focus on the dynamic operation that provides a unique dining experience and special events to guests from all over the world. 

Marc led teams with the Toronto flagship property of Four Seasons Hotels and Resorts with a focus on luxury hospitality standards leading the food, beverage, and catering operations. He has travelled around the world to establish a network of industry professionals that have helped to sharpen his concepts and execution. 

Marc also held an executive leadership role with Drake Properties and developed Playfuel Inc., a bespoke consulting firm focused on hospitality clients that included hotels, restaurants, and special event venues in Ontario.
