large avocados, pits removed

1

vanilla bean, split lengthwise

¾

cup unsweetened cocoa powder

½

cup pure maple syrup

¼

cup agave nectar

¼

cup (or more) fresh orange juice

½

teaspoon kosher salt

cups heavy cream (optional)

¼

cup cocoa nibs and/or chopped hazelnuts

Preparation

  1. Step 1

    Scoop avocado flesh into a blender and scrape in seeds from vanilla bean; reserve pod for another use. Add cocoa powder, maple syrup, agave nectar, orange juice, and salt and blend to a coarse purée. With motor running, gradually stream in ¾ cup hot (but not boiling) water; blend, adding more orange juice as needed, until smooth and creamy.

    Step 2

    Divide pudding among eight 4–6 oz. ramekins or small bowls and chill, uncovered, at least 2 hours.

    Step 3

    Just before serving, whisk cream in a medium bowl to soft peaks and spoon over pudding; top with cocoa nibs and/or hazelnuts.

    Step 4

    Do Ahead: Pudding can be made 3 days ahead. Cover and keep chilled.

  • So yummy! And my husband couldn’t believe it was made from avocados! Skipped the agave and didn’t miss it. Zested the orange and threw it on top. Can’t wait to make it again!

  • This is one of my fave fast dessert recipes, but don't use both sweeteners; that makes it way TOO sweet! I usually forgo the agave bc I like the taste of the maple. It's great for summer and vegans!

  • I love this pudding. It tastes rich and has a great consistency. I used a teaspoon of vanilla extract since we didn’t have a bean, and used a slightly less amount of maple syrup. The orange juice is a totally valuable addition.

  • A little too sweet for my taste, but tastes great. It's a healthy alternative to traditional pudding recipes and you don't even taste the avocado.

  • This is very much like the M Cafe de Chaya recipe that they once posted on their restaurant chalkboard over a decade(?) ago. The orange juice is a delicious addition :). It's a keeper.

  • Love this recipe use it all the time at work! Great with a little smoked maldon salt on top and the cocoa nibs are a must!

  • No idea why anyone would give this less than 5 stars. It is outstanding! It's the only pudding that my 3-year-old knows, and adults love it as well. It's a bit expensive to make, but we happen to always have maple syrup and agave syrup in the house. I recommend adding orange zest as well.
