Despite the world and its mother claiming tenuous Limerick connections after the recent Munster hurling final win (excluding Clare natives), I’ve decided to set aside my home county this week and own up to my Tipperary roots.

I was reminded of these roots last week when I was taking one of our Hereford heifers to the abattoir. Since opening the farm shop, we’ve had a number of requests for beef, especially offal, which seems to be experiencing a renaissance.
