How many burgers can you get out of a 28-month-old pure-bred Hereford heifer? The answer so far, seems to be an infinite number, which is just as well because they’ve been selling like hot cakes from the farm shop.

We barely managed to keep a pack for ourselves last weekend. A few weeks ago I took one of our heifers to the abattoir and as we wait for the prime cuts to traditionally dry age, our butcher is able to prepare the more basic mince elements.
