KINOBI builds carbon-neutral distillery Our ultra-premium Japanese gin KI NO BI is considered a favourite among gin connoisseurs worldwide. In fact, its popularity has grown so much over the last few years that a new distillery in Kyoto is needed to meet the increased demand. Set to open in the autumn of 2025, the new Kyoto Distillery will increase production capacity by at least five times. Additionally, it will use a highly efficient boiler, powered by electricity using only renewable sources, to continue to make one of the world’s most exclusive gins. On June 24th, a traditional Japanese ground-breaking ceremony was held at the new site, with a Shinto Shrine master blessing the ground to ensure smooth construction and the distillery's future prosperity. The ceremony was attended by Kyoto Distillery employees, as well as local government officials, key business partners, and representatives from The Absolut Group. #KINOBI #Kyoto #distillery #gin #carbonneutral

Growing Tencha Tencha thrives in a controlled environment, particularly in select areas of Japan like Kyoto. Here, the cool, misty climate and well-draining, elevated soil allow the tea plants to develop slowly, enhancing their flavor profile. The Shading Game Approximately 20-30 days before harvest, the tea bushes are covered with straw or black vinyl shades in a process known as "kabuse." This reduces sunlight exposure by 70-90%, increasing chlorophyll production and boosting the leaves’ vibrant green color and rich umami taste. Picking the Leaves Harvesting Tencha is a labor of love, done by hand to select only the finest, youngest leaves. Looking back at my more unusual professional destinations in the drinks industry, this tiny, hidden away shochu standing bar in Tokyo had a treasure trove of options to try. Shochu is a very traditional spirit in Japan and other countries in Asia. Rice, barley, sweet potatoes and buckwheat are just a few of the ingredients typically used for distillation but many other crops can be used. Like so many spirits in recent years, there has been active experimentation with oak ageing. Given the different distillations, regions and techniques there are over 5000 types to choose from in Japan alone, so I needed expert guidance to navigate the options! But getting real life context on how the final consumer chooses the product, and where they choose to consume it, has helped us gain valuable insight. #oakageing #shochu #internationaladventure
