Had a nice lunch with Paul Gabie yesterday and it was fantastic to hear about the growth of ecoSPIRITS in detail and their rapid take up across the hotel industry. It was particularly interesting to learn about bars that are making a feature of the technology and displaying it front of house for pours and ready made cocktails rather than ‘hiding’ it out back to refill display bottles. Ready made cocktails in the 90’s were massive red flag in any bar. Now with a focus on quality ingredients, batch martinis and aged negronis are found in the worlds best cocktail bars. How many more more sustainability challenges can be solved with good marketing? Why bother with bottles at all for large volume spirits that don’t need it? Why bother hiding it? Conveying what's inside - the main purpose of packaging design, the way I see it. Especially important, and hard, when in comes to creating packages for the new categories to where our spirits and Reds belong. "A spirit without alcohol?
