We're all about seasonal cuisine at Amaterra, and there's nothing quite like venturing through the farmer's market in the thick of spring, imagining how each ingredient could contribute to a finished plate. We are officially in the spring growing season, and the bounty of our fall/winter plantings and local greenhouse collaborations continues to delight us. We are fortunate to partner with several farms (listed below) whose expertise ensures that Amaterra always serves the freshest hyper-seasonal and local ingredients. Currently, we're featuring some of the most exciting ingredients of early spring, such as spring onions, green garlic, flower blossoms, morel mushrooms, and many more unique flavors that are sure to tantalize your taste buds!
Our visits to the Beaverton Farmers Market and the updates we receive from our partner farms bring us exciting news of growth and new possibilities. These developments inspire us to introduce seasonal updates to our menu's classics, such as risotto and salads, and to create new dishes that can be shared and enjoyed together, further enhancing the sense of community at Amaterra. Some of the ingredients we're particularly excited about are asparagus, rhubarb, new potatoes—a term that's only temporary—and a variety of fish that grace our Pacific Northwest rivers and oceans at this time of year.
While our dinner menu is a reliable source of Amaterra's community favorites, the Specials Card is where the magic of seasonal updates truly shines. It's not just about R&D for new dishes; it's a platform for us to showcase the vibrant, ever-changing world of our partner farms. Take, for instance, the image above. The apricot & blackberries with pistachio pesto and mustard frills dish was a fleeting delight, available for only a few weeks in late spring last year. These ingredients, perfectly in sync with their growing seasons, came together to create a dish that was both fleeting and exciting, a true testament to the beauty of hyper-seasonal cuisine.
