We have an exciting opportunity for an experienced Chef at our Courtyard Palo Alto/Los Altos property for our newly renovated Long Bar and Bistro. This is not an ordinary Courtyard and this is not your typical Bistro! We offer a unique food and beverage operation that is much more like a full-service hotel or free-standing restaurant while also serving extensive catering and banquet events. The Long Bar and Bistro is a local destination that offers casual, American dining in a relaxing, hip atmosphere for both guests and local residents to enjoy. We are looking for someone who can partner with our Restaurant Manager and leadership team to bring an unprecedented level of creativity, hospitality, and quality to the operation.


INDUSTRY KNOWLEDGE


We are looking for a leader who will be responsible for the overall management of the Food and Beverage (F&B) Department's operations including revenues, expenses, personnel, brand guest satisfaction scores, and brand quality assurance inspection score. We need a creative leader who can execute the operations according to brand standards while also finding opportunities to go beyond these standards to provide a superior product and service levels.


Leading the daily operations with high service standards while meeting the revenue and cost control goals the departmental bedgetmplement F&B initiatives over and above brand standards to provide a superior product and superior level of service


Additonal tasks include:

  • Order all F&B supplies, cleaning supplies, and uniforms
  • Perform all necessary scheduling duties for Food & Beverage departments
  • Supervise daily F&B shift operations and monitor compliance with all F&B policies, standards, and procedures
  • Oversee quality control and training of all F&B departments
  • Support and supervise an effective monthly self-inspection program
  • Operates all department equipment as necessary and reports any malfunction
  • Schedule and supervise staffing levels to verify that guest service, operational needs, and financial objectives are met
  • Develop and update menus as required by the brand, the ownership, and the management company
  • Create custom, weekly specials to keep the Food and Beverage experience dynamic
  • Develop and update catering menus in coordination with the sales team to promote banquet events
  • Develop banquet events service standards and training required to execute successful events
  • Encourage and build mutual trust, respect, and cooperation among team members
  • Understand all employee positions well enough to perform duties in employees' absence including food and beverage preparation and service
  • Monitors and maintains the productivity level of employees
  • Verify that all team members/supervisors understand the brand-specific philosophy
  • Maintain the operating budget, and verifies that standards and legal obligations are followed
  • Perform weekly and monthly food costs and proper inventory controls
  • Assist supervisors in understanding team members ever changing needs and expectations, and how to exceed them
  • Communicate areas that need attention to staff and follow up to ensure understanding
  • Coordinate cleaning program in all F&B areas (e.g., General cleaning), identifying trends and making recommendations for improvements
  • Establish and maintain open, collaborative relationships with employees
  • Create and nurture an environment that emphasizes motivation, empowerment, teamwork, and passion for providing service
  • Stay readily available/ approachable for all team members
  • Demonstrates knowledge of the brand-specific service culture
  • Review comment cards and guest satisfaction results with employees
  • Leads by example and has frequent interactions with customers

FUNDAMENTALS:

To be successful in this role, you must have at least 3years of restaurant culinary experience. Hotel-specific experience is not required. Strong leadership skills, Experience with scheduling, menu development, sanitation, training, and time management, and organization are essential.


Salary Range: $70,000 - $80,000 annually
