Today is World Food Safety Day. The World Health Organization’s theme for this year is “Prepare for the Unexpected.” We caught up with our Director of Food Safety and Quality Assurance Vanessa Cranford to ask, “how does SSP America prepare for the unexpected?” Vanessa explained, “The truth is that food safety is a shared responsibility. There are six ways we prepare as a team.” They are: 1. PCQI: We have 60 trained Preventive Controls Qualified Individuals (PCQI) who work in operational leadership roles. 2. Business Supplier Partners: We work with business supplier partners and our procurement team to integrate food safety into procurement contracts and supplier audit requirements. 3. Design: The design of new locations and menus meets regulatory kitchen and equipment design standards. 4. Menus and Recipes: Our culinary team creates recipes with food safety integrated into the operational procedures and review of ingredients. 5. Recalls: We prepare, plan, train, and closely monitor industry and supplier recalls to promptly respond when products and ingredients must be removed. 6. Monitor FDA/CDC: We monitor the U.S. Food and Drug Administration (FDA) industry outbreak data and the Centers for Disease Control and Prevention (CDC) industry epidemiology data to make business decisions on raw ingredients and commodities. With safety plans in place and a daily commitment throughout the organization, we can respond effectively if the unexpected happens. What is your current employer and role?  Manager of Sensory at Synergy Flavors 2. How did attending the SSP conference impact your professional growth? Probably the biggest way it impacted my professional growth was introducing me to ASTM standards I had not heard of yet during the joint session. This allowed me to take knowledge back to my company and improve some of the sensory practices as well as be able to more clearly explain the theory behind testing. 3. Did you gain connections that helped you advance your career?  Absolutely! SSP was the first conference I attended in person since COVID and so I'm very thankful to have met so many brilliant scientists both on the ASTM and SSP side. 4. How did the travel award benefit you?  Overall, it helped financially support me in traveling to my first conference since COVID. Not only was I able to meet inspiring colleagues and absorb all of the great info, I was so honored to present at the joint ASTM x SSP session around panel performance metrics. Definitely one of the highlights of my career so far! 5. What was your favorite thing about the SSP conference?  I really enjoyed how the conference was both technical and developmental. I learned a lot about methodologies, analyses, and more. But not only did I learn about the hard science, I learned how to better my soft skills as well with the Dare presentation. 6. How does your SSP membership benefit you?  I've really enjoyed the Connectors events. Especially during the pandemic, they were an amazing opportunity to get to meet Sensory Scientists at other companies. 7. What impact has sensory had on your life? What sensory experiences stand out — think of favorite foods, sounds, textures, etc.  I think this question is hard to answer because I'm not sure I could list one aspect. When you think about it, life is constant sensory experiences! For example, my favorite flavor is coffee, my favorite texture is a warm fuzzy blanket fresh out of the drier, and I love bitter products like dark chocolate. And each individual person has their own unique preferences just like these! What I love about sensory is how the science can make analytical use of each persons' experiences to contribute to some really amazing product insights. So overall, sensory has impacted me in a huge way because sensory is with us every day! 8. What’s a fun fact or something most people don’t know about you?  Before I got into the world of sensory, I used to care for sharks, otters, sea turtles, and more at an aquarium! Joel Cinnamon, chief operating officer: Quick service restaurants, frozen yogurt and ice cream stores, cafes, assisted living facilities, hospitals, hot chicken restaurants, Mexican restaurants and burger joints, chains, food trucks, convenience stores, theme and water parks, K-12 schools, universities, corporate offices and more. What sets PASMO’s soft serve and frozen beverage machines apart in the industry? Our technology is modern when compared to our competitors using older belt and pully technologies. Our machines are also one of the quietest, have minimal service issues, use fewer parts, fewer electrical components and put out less heat; which leads to an overall lower cost to own and operate. How is your equipment keeping pace with ever-increasing energy consumption requirements? We are much more efficient than competing models due to our power inverter/sequencers, as well as energy-efficient motors that allow most of our machines to operate with air cooled technology versus water. Less parts, less heat and less need for internal and external cooling help our customers consume less energy. How has the company innovated in recent years? There are several ways PASMO has innovated: We moved from belt driven to motor to direct drive technology. We were the first to have agitators in the hoppers as a standard feature. We have a new pump that allows us to introduce particulates (or inclusions) directly into the mix using a pressurized system. Our machines are available in a variety of sizes to replace legacy Taylor, Electro Freeze and Stoelting machines to avoid reconstruction or change existing build outs. We have recently announced whipped cream/cold foam and robotic vending soft serve machines. How is your company incorporating new technologies into its products? We are utilizing smart technologies/automation (the iCream machine for example) as well as more efficient designs, new materials and easier cleaning capabilities that allow our operators to reduce the cost of operating our equipment. Can you explain your machine program? Operators can get PASMO machines with no upfront costs. This program is offered by one of our dealers, not from PASMO itself. It is UNFAIR to force spirits lovers to make a special trip for their fav spirits products. Ventura Foods is a California-based joint venture between CHS and Mitsui & Co. that produces oil-based ingredients and food products for the foodservice industry. Co-owning Ventura Foods directly connects CHS farmer-owners to the food supply chain, says Todd Biedenfeld, director of vegetable oil and sunflower sales with CHS. “CHS has had incredible returns from our soy and canola processing businesses over the last few years and Ventura Foods is a large contributor to that success,” he says. “Rewards to owners traditionally end when we ship out the refined oil and meal from our facilities.
