Keep things simple with Jamie Oliver's six-ingredient one-cup pancakes
There are few things quite as exciting to look forward to for breakfast as a good stack of pancakes and Jamie Oliver's one-cup recipe makes them easier to make than ever.
Jamie Oliver shared on his website a quick and simple recipe for pancakes with blueberries, which pair lovely with “a dollop of natural yoghurt”.
With just six simple ingredients, this beloved breakfast dish is “super easy” to make and serves four people.
The chef said: “Super-easy to make and ready in just 15 minutes, these pancakes make the perfect weekend breakfast or brunch — a great way to get the whole family together! Get creative with sweet or savoury toppings. ”
One-cup pancakes recipe
Ingredients
- One large free-range egg
- One cup of self-raising flour
- One cup of milk
- 200 g blueberries
- olive oil
- Four tablespoons natural yoghurt
Instructions
Break the egg into a large mixing bowl. Add the flour, milk, and a sprinkle of sea salt.
Whisk everything together until you have a smooth batter. Gently fold in the blueberries.
Heat half a tablespoon of olive oil in a large non-stick frying pan over medium heat. Tilt the pan slightly to coat the bottom evenly with oil.
Scoop portions of batter into the pan, leaving space between them for spreading. Each scoop will make one pancake, so you might need to cook in batches.

Cook for one to two minutes, or until bubbles appear on the surface and the bottoms are golden brown. Carefully flip the pancakes over.
Once golden on both sides, transfer the pancakes to a plate.
Repeat with the remaining batter, adding more oil to the pan if needed between batches.
Serve the pancakes warm, topped with a dollop of yogurt and extra fresh berries, if desired.
