Fresh ham is available at the butcher, but most commonly, hams are sold cured in one of two ways. Wet-brined hams are called city hams; they’re usually smoked, sold on the bone, and ready-to-eat (a great option if you’ve got a lot of other labor-intensive side dishes planned for the holiday table). Country hams are cured with a dry brine. They’re rubbed with salt (and sometimes other ingredients), hung to dry and sometimes age, and can be sold raw, though many of the options on this list are smoked. Country hams are a bit more like prosciutto, while a juicy honey-baked ham is more likely to be a city ham.

How much ham do I need?

Bone-in hams should serve two to three people per pound, and boneless hams should serve four to five people per pound.
