Preparation
Step 1
Toss cucumbers in a large bowl with vinegar, sugar, red pepper flakes, and 2 tsp. salt. Chill, tossing once, at least 1 hour and up to 6 hours.
Step 2
Just before serving, add dill and lemon juice and toss to combine. Taste and season with more salt if needed.

Back to TopExcellent recipe. I added some thinly sliced garlic, which worked well. I let mine pickle for about two hours and thought their crunchiness was perfect at that point. Had they gone longer, I don't think they would have been as satisfyingly crunchy. But to each their own! This was the quickest hors d'oeuvres to throw together, and they were gone fast.

My wife and I give this two thumbs up. I closely followed the recipe (used extra red pepper flakes) and English cucumbers from my garden - I also marinated them in a zip lock bag to make sure the spears were nicely soaked -- Yum!

Finally, something new and tasty to do with cucumbers. We had this recipe for our vegetable last night along with Pork Loin and mashed potatoes. It was spicy and much better than any pickle I have had.
