Preparation
Roasted Eggplant and Garlic Mayo
Step 1
Preheat oven to 400°. Place eggplant slices on a large rimmed baking sheet and rub both sides with oil. Season with paprika, salt, and pepper. Roast until golden and tender, 30-40 minutes.
Step 2
Whisk garlic, mayonnaise, and vinegar in a small bowl; set aside.
Beet Salad and Assembly
Step 3
Toss scallions, herbs, beets, olives, capers, and oil in a medium bowl to combine.
Step 4
Spread cut sides of focaccia with garlic mayo. Build sandwiches with focaccia, eggplant, feta, and beet salad.
Step 5
DO AHEAD: Eggplant can be roasted 1 day ahead. Cover and chill.

I made the Shockingly Easy No-Knead Focaccia from BA (keeping it in house) for the base, roasted beets and used the beet greens in the salad and used goat cheese. This is a great sandwich. A repeater for sure.

This sandwich is so flavor, not sure why the rating is so low! My fiancé said it was delicious, and he hates beets. I did use fresh beets though instead of pickled.

Love the flavors in this sandwich!! It’s so fresh and so many different profiles. It’s very satisfying and we are not vegetarians but I would pick this over some meat sandwiches. I’m not sure why it has not such great reviews. I’m thinking it probably comes down to the bread. Invest in a good bakery foccachia, it makes all the difference.
