Ingredients

garlic cloves, finely grated

¼

cup olive oil

¼

cup pure maple syrup

1

tablespoon harissa paste

2

teaspoons cumin seeds

Kosher salt and freshly ground black pepper

pounds small rainbow carrots, scrubbed, tops trimmed to about ½”, halved

1

lemon, thinly sliced, seeds removed

Preparation

  1. Step 1

    Preheat oven to 450°. Whisk garlic, oil, maple syrup, harissa, and cumin seeds in a small bowl; season garlic mixture with salt and pepper.

    Step 2

    Toss carrots and lemon with garlic mixture in a large roasting pan to coat; season with salt and pepper. Roast, tossing occasionally, until carrots are tender and lemons are caramelized, 35–40 minutes.

    Step 3

    DO AHEAD: Carrots can be roasted 6 hours ahead. Let cool; cover and chill. Bring to room temperature or reheat slightly before serving.

  • I believed you…. I believed all of you! My carrots were in a 350 degree oven for 45 minutes (45!) and my father’s review? Crunchy. Undercooked. And he was correct! Dear reader, hazard not these comments. Were I to repeat Thanksgiving history, my oven would be at at least 400, of not the suggested 450.

  • A great side (once you correct the recipe) for those carrot lovers. I will make this again for Thanksgiving. To achieve that awesome presentation, pick colorful carrots.

  • Love this! Such a great recipe. I used sambal oelek in place of harissa (didn't have any time to pick up some harissa paste), still great spicy flavor. I quartered my rainbow carrots and with the typo? of 450°, roasted these babies for less than 10 minutes and hit them with a quick broil to crisp! Would definitely recommend this recipe!

  • These were incredible! Thanks to other reviewers I cooked them at 350 for 25-30 minutes and they turned out nicely Caramelized and still had a crunch. These were packed with flavor and a slight hint of spice. I served these on the side with short ribs and polenta.

  • the Nutritional Content is incorrect, you can't have 21 fibers and 5 sugars with 0 carbs. fix that and the oven temp and the recipe is perfect. and what is the check box below that says "Display my username null with review" i am guessing "null" is a typo.

  • The oven tempurature on this recipe is WRONG!!!!!!!! Make sure you set it to 350! It's a typo! You will burn out everything and fire and smoke and devastation will come to your planned meal. If made correctly, it's amazing!
