Think of this as a salad sandwiched between two slices of bread.

Ingredients

cup finely chopped chives

¼

cup mayonnaise

¼

cup tarragon

¼

cup whole-milk Greek yogurt

1

lemon, halved

tablespoons extra-virgin olive oil, plus more for drizzling

Kosher salt, freshly ground pepper

½

head of butter or Bibb lettuce (about 2 ounces), large leaves torn

¼

English hothouse cucumber, thinly sliced

1

avocado, thinly sliced

4

slices grainy bread

8

ounces fresh mozzarella, sliced ¼ inch thick

2

cups sprouts (such as broccoli sprouts or alfalfa)

Preparation

  1. Step 1

    Place chives, mayonnaise, tarragon, and yogurt in a blender. Add zest and juice of 1 lemon half, then add 2 Tbsp. oil; season with salt and pepper. Purée until smooth.

    Step 2

    Squeeze juice from remaining lemon half over lettuce and cucumbers in a medium bowl. Drizzle with oil; season with salt and pepper. Toss to coat.

    Step 3

    Divide and smash avocado between 2 slices of bread; season with salt and pepper. Arrange lettuce and cucumbers over. Top with mozzarella and sprouts. Spread remaining 2 slices of bread with ¼ cup green goddess dressing and close sandwiches.

  • I had some left over avocados and fresh mozzarella from a dinner party this past weekend. In my travels I picked up some sprouts, fresh tarragon, and Bibb (Boston) lettuce. I just made these sammies this evening for dinner and served with a side of watermelon and feta salad. What a delicious sandwich and it was a perfect pairing for a toasty summer (almost official summer) meal. A definite for the lunchbox for work and a light but satisfying meal. Thank you!

  • Yum! We make this recipe every summer at least twice. Sometimes we change it up a bit like using basil instead of tarragon or goat cheese instead of mozzarella, but it is always a winner.

  • This was so light and delicious! I failed at reading the recipe before going to the store, and bought basil instead of tarragon and forgot the lettuce. But it was still very good and I will definitely make again. Wonderful!

  • Looks so good, but I don't much care for mayo. I generally substitute guacamole. How would that go? Any other suggestions?

  • Loved the recipe! This sandwich gave me a new appreciation for tarragon - usually not a huge fan of anise/licorice flavor but it was well balanced with the rest of the ingredients. I will definitely be adding this sandwich to my lunch time rotation.

  • Very tasty sandwich but the serving would be half sized for someone small/average sized. I calculated the calories on a lark and it's over 1000 calories per serving. Now it makes sense why I was so full afterwards. I could have saved my other half of the sandwich for dinner :I
