Dairy-Free Trout Dip

The almond purée that is added to the smoked trout will fool you into thinking there’s a boatload of dairy in this dip. It gives the dip an outrageously creamy consistency.

Ingredients

1

cup slivered almonds

¼

cup olive oil

½

teaspoon kosher salt, plus more

5

ounces smoked trout, skin and bones removed

2

scallions, dark green and white parts separated, very thinly sliced

½

teaspoon finely grated lemon zest

1

teaspoon fresh lemon juice, plus more

Freshly ground black pepper

Preparation

  1. Step 1

    Purée almonds, oil, ½ tsp. salt, and ½ cup water in a high-powered blender on high speed until thick and smooth, about 3 minutes. Transfer almond purée to a medium bowl.

    Step 2

    Using a fork, smash trout into smaller pieces and mix with scallion whites, lemon zest, 1 tsp. lemon juice, and a big pinch of pepper. Taste and adjust salt and lemon juice accordingly. Transfer to a serving bowl, then top with scallion greens and more pepper.

    Step 3

    Do Ahead: Dip can be made 2 day ahead. Cover and chill.

  • This is a fantastic recipe regardless if you’re dairy-free. It’s healthy, easy to make and delicious. I make it for every party and family gathering- it never disappoints. Use it as a dip, a spread on a bagel or toast, or on a plate with veggies.

  • This is delicious - and clever! The directions are horrendous, and the video includes mayo when the recipe does not but I highly recommend this dish. Thank you to reviewer who suggested the Trader Joe's smoked trout, I bought the packaged one and it's great.

  • Genuinely confused as to why this doesn’t have more positive reviews - it is DELICIOUS! Yes, you mix the almond purée with the trout mixture. The recipe is simple (aside from removing the trout bones) and adaptable - we’ve made it with white fish instead with great results.

  • Despite incomplete instructions (lucky dip is not a technically complex dish) and a video that totally doesn’t match (avocado??) this recipe turned out incredibly well as a part of our Feast of 7 Fishes. If I could have, I wouldn’t have shared with anyone else.
