Ingredients
for 12 bites
- cooking spray
- 8 slices Wellsley FarmsⓇ Sliced Bacon, chopped
- 10 Wellsley farmsⓡs by Nellie's Free Range Eggs
- ⅓ cup Wellsley FarmsⓇ Mild Cheddar Shreds, plus more for topping
- 1 cup cottage cheese
- 2 tablespoons cornstarch
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon paprika
- ¼ teaspoon cayenne pepper
- 3 tablespoons chopped chives

Preparation
- Preheat the oven to 375°F (190°C). Coat a 12-cup nonstick muffin tin with cooking spray. Set aside.
- Place a cast iron skillet over medium heat. Cook and stir the Wellsley FarmsⓇ Sliced Bacon in the hot skillet for about 10 minutes, or until crispy. Drain on a paper towel-lined plate and set aside.
- In a blender, add the Wellsley FarmsⓇ by Nellie's Free Range Eggs, Wellsley FarmsⓇ Mild Cheddar Shreds, cottage cheese, cornstarch, salt, black pepper, paprika, and cayenne pepper. Blend for about 2 minutes, or until smooth. Pour into the prepared muffin tin, leaving ½ inch from the rim of each cup exposed. Top each with the cooked Wellsley FarmsⓇ Sliced Bacon, more Wellsley FarmsⓇ Mild Cheddar Shreds, and chives.
- Bake for 15 minutes, or until completely cooked through. Cool for 10 minutes before serving. Package any leftovers in a zip-top bag or airtight container for storage.
