Bacon Cheddar Egg Bites

Ingredients

for 12 bites

  • cooking spray
  • 8 slices Wellsley FarmsⓇ Sliced Bacon, chopped
  • 10 Wellsley farmsⓡs by Nellie's Free Range Eggs
  • ⅓ cup Wellsley FarmsⓇ Mild Cheddar Shreds, plus more for topping
  • 1 cup cottage cheese
  • 2 tablespoons cornstarch
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 3 tablespoons chopped chives

Preparation

  1. Preheat the oven to 375°F (190°C). Coat a 12-cup nonstick muffin tin with cooking spray. Set aside.
  2. Place a cast iron skillet over medium heat. Cook and stir the Wellsley FarmsⓇ Sliced Bacon in the hot skillet for about 10 minutes, or until crispy. Drain on a paper towel-lined plate and set aside.
  3. In a blender, add the Wellsley FarmsⓇ by Nellie's Free Range Eggs, Wellsley FarmsⓇ Mild Cheddar Shreds, cottage cheese, cornstarch, salt, black pepper, paprika, and cayenne pepper. Blend for about 2 minutes, or until smooth. Pour into the prepared muffin tin, leaving ½ inch from the rim of each cup exposed. Top each with the cooked Wellsley FarmsⓇ Sliced Bacon, more Wellsley FarmsⓇ Mild Cheddar Shreds, and chives.
  4. Bake for 15 minutes, or until completely cooked through. Cool for 10 minutes before serving. Package any leftovers in a zip-top bag or airtight container for storage.
