A new cheese shop called Caseus Diem is slated to open along Division Street in the Richmond area, reports What Now Portland. The name — a play on carpe diem — translates to “cheese the day.” Caseus Diem is targeting a mid-July opening, but an official date hasn’t been announced yet. A liquor license has also been filed but is still being processed by the City of Portland.

The shop will carry over 75 types of cheese, with 12 cheeses available to try as part of a build-your-own cheese board. In addition to cheese, the shop will also carry bread, cured meats, crackers, honey, and more.

Before opening its storefront, owner Han Schmidt operated Caseus Diem as a cheeseboard-by-order business offering special seasonal menus and custom combinations. Schmidt’s background in cheese began nearly a decade ago while working in a cheese shop in Carmel-by-the-Sea. In the years since, they told What Now Portland, they’ve spent time working in grocery stores but missed the human interaction that came with a specialized storefront, which led to opening their own cheese shop after moving to Portland.

Portland food carts cut hours in response to the heat wave

The Oregonian reports that food carts are responding to the Portland heat wave by cutting hours, and even closing down for some days. With the temperature inside of food carts often 10 degrees warmer than outside, a 92-degree day on the street becomes 102 inside the kitchen. Carts like Mi Fiesta Garibaldi also have no air conditioning, even though they are cooking inside, often relying on a skylight or window to stay cool. KGW reports that even amid the heat, many carts remain open for business.
