Welcome to the forums :)

First, which Mac do you have? Snow Leopard will only run on an Intel Mac produced between 2006 and 2011.

If you have a PowerPC Mac, you need Leopard.

If you have an Intel Mac produced after 2011, you need a version of OS X newer than Snow Leopard.

Some Audio Units that work with PPC Leopard.

Commercial:

Valhalla DSP: https://valhalladsp.com/

These have "legacy Logic 8/9 builds" downloadable which include PPC versions, while it's not explicitly stated on the webpage.

- Valhalla Room
- Valhalla Shimmer
- Valhalla VintageVerb

Toontrack: https://www.toontrack.com/

Not sure anymore whether EZdrummer 1 can be bought.

- ToonTrack EZdrummer (not version 2!) and all sample kits released before EZdrummer 2

Lexicon: https://lexiconpro.com/en-US
- Lexicon LXP native bundle
- Lexicon PCM native bundles

Free:

Airwindows: https://www.airwindows.com/audio-units/
- basically all of them. 288 odd, interesting and beautiful signal processing things.

Togu Audio Line: https://tal-software.com/products
- TAL-Vocoder version 1.0 (at least)
- TAL-Elek7ro version 1

Magnus Jonsson: http://magnus.smartelectronix.com/
- Ambience

Audiodamage: https://www.audiodamage.com/pages/free-and-legacy
(I've only checked which ones have PPC AU versions, PPC VST might be available for others too...)

It's probably better to list and link to the final Leopard-compatible version. Not sure how VLC 2.0.8 ended up on the list.
I have no idea how that got there either. Was going to change the link to VLC 2.0.10 but wasn't able to find it on the VLC site. Maybe someone else can find a link and change it to 2.0.10.

Added for Intel Leopard:
  • VirtualBox 4.1.44
    • Found this after much trial and error testing for the last compatible version -- which also happens to run Debian 11 just fine under Leopard.
  • SmcFanControl 2.4
Universal Binary / PowerPC / Intel-32bit:
  • iTerm2 2.0-legacy
  • TenFourFox FPR32.5 - added CPU specific links and help text.
Updated a handful of links.

Just looking at this thread again after 5 years since we started these and I have to say I am super impressed with the old feline, especially on my 2009 Core2Duo Mac Mini.

Another small update:

Whether by design or neglect, Apple are also burying quick access to support downloads from their web site for legacy builds of OS X.

I was amazed by how many searches it necessitated to find a working download for Java for OS X 10.5 Update 10. I went ahead and updated the wikipost to a direct link to an active location for download on apple-dot-com (much as I did last month for the Combo Updaters for Server and Client).

I don’t have time right now to go through every item on the wikipost to update links away from the KB info pages for download links (almost all of which are wiped away everywhere, save for archive-dot-org snapshots).

If anyone has time and interest to do so, have a look through the OS X-related software update links in the wikipost, locate direct links to the downloads (the .dmg and .pkg archives), and update the links appropriately from any kb predecessors (as I have with the Combo Updaters and the aforementioned Java Update 10).

Cheers! :)

Quicktime 7.7.0 updated to link directly to the garden's download.
iTunes 10.6.3 updates to link directly to apple's download.

We still need direct links for Migration Assistant, Airport Utility and Front Row. There is a large monolithic download on the garden that has all these updates. I think it would be useful to break that out to individual updates that can be linked if anyone is inclined to do so.

Some Audio Units that work with PPC Leopard.

There were tons of plug-ins that worked in PPC Leopard. Commercial and free. I do check on my G4 Mini now and then which ones have/had PPC code, but most of this stuff is either not available anymore or not supported and can not be purchased or registered.

Some free Voxengo stuff can still be pulled from archive org, btw:
