Bacon and Cheddar, that time-honored pairing, meet up once more in this easy, spicy skillet dip. Grated Cheddar, the sharper the better, and crisp bacon slivers are folded into a mix of cream cheese and sour cream that’s been zipped up with hot sauce. You can prepare the dip a few hours in advance, then broil it just before serving so that the Cheddar emerges melted, singed and bubbly on top. Marinated cherry tomatoes (or you can substitute prepared salsa), scallions and more bacon make for a colorful, juicy garnish. Serve it with anything you love to dip: Chips, veggies or crackers are all welcome.

  • 1cup diced cherry tomatoes (or use 1 cup prepared salsa)
  • teaspoons hot sauce, plus a dash
  • Pinch of salt
  • 8ounces bacon, diced
  • 1bunch scallions, thinly sliced and separated into green and white pieces
  • 1(8-ounce) package cream cheese, cut into 2-inch pieces
  • cups sour cream
  • cups extra-sharp Cheddar, grated
  • 1teaspoon freshly ground black pepper
  • Celery sticks or other veggies, tortilla chips, potato chips or crackers, for serving

Preparation

  1. Step 1

    Set an oven rack 4 inches away from the broiler and turn the broiler to high.

  2. Step 2

    In a small bowl, combine tomatoes with a dash (or two) of hot sauce and a pinch of salt (or skip this step if using salsa). Set aside to marinate.

  3. Step 3

    Heat an 8- or 9-inch cast-iron or broiler-safe skillet over medium-high. Add diced bacon and stir occasionally until crisp and browned, about 5 to 8 minutes. Using a slotted spoon, transfer to a paper towel-lined plate and reserve. Drain off most of the excess grease from the skillet, leaving 1 tablespoon bacon fat.

  4. Step 4

    Add scallion whites and a pinch of salt to the bacon fat and sauté until tender, about 1 to 2 minutes. Stir in the cream cheese and keep stirring until it melts, about 3 to 4 minutes.

  5. Step 5

    Reduce heat to low and stir in the sour cream, 2 cups grated Cheddar, black pepper, hot sauce and all but 1 tablespoon of the cooked bacon (save remaining tablespoon for garnish). Taste and add more salt and hot sauce if needed. Stir until the mixture is warm but not hot, 2 to 4 minutes.

  6. Step 6

    Sprinkle top with ½ cup Cheddar. Broil for 2 to 3 minutes, or until the cheese is melted and the top is beginning to brown and bubble.

  7. Step 7

    Remove from heat and top with scallion greens, reserved bacon and marinated cherry tomatoes. Serve with celery sticks, veggies, tortilla chips, potato chips or crackers.

Cooking Notes

There's always another way. If I were serving this to vegetarians or anyone who avoids pork, I would fry up some Soyrizo (TJ's has a house brand) to cook off most of the moisture and use that instead.

This recipe is so indulgent it might be even better without bacon. That being said, if you are afraid the taste profile would be off without a salty protein, perhaps use some beans or a meat substitute.

Put the bacon in the freezer for a few hours before dicing it. Much easier -- and safer.

If serving to folks who don't eat bacon, would this recipe work without that ingredient?

I have not made but looking at the photo I thought the tomatoes were chopped peppadews, and think those would be better than the tomatoes - briny with a bit of spiciness and snap.

Skip the bacon, add some smoked paprika, cut back some on the cream cheese and sour cream. The cheddar taste needs to come through more clearly. Maybe up the hot sauce or add some garlic powder.

Recommend using tiny roasted potatoes as dipping vehicles.

Outstanding dip that was an incredible crowd pleaser for a group. Multiple people asked for the recipe. I will definitely make again.

Instead of scallions I cook chopped onions in the bacon grease at the beginning. This has been very popular wherever I take it.

A family recipe incorporated refried beans, cream cheese, and salsa, topped with shredded sharp cheddar and/or monterrey pepper jack; it was much more flavorful. We really wanted this to be delicious, but it was bland. We'll try again with some flavor enhancers; jalapenos, raw onion, green chiles, etc...

Delicious. I did not cut the bacon before cooking. Next time put green chilies for some kick.

Fantastic! Everyone loved it. I followed the recipe exactly, except I added a splash of water to deglaze the pan after cooking the bacon to free up the delightful crispy stuff stuck on the pan.

As others have commented, I didn’t think the cheddar flavor was strong enough here, and 1/2 pound bacon seemed too much.

Just made this for the big game. Came out beautifully! I did not need to add any salt.

Boring! Love bacon, love cheddar, but this recipe just didn't work. Not much flavor even with the addition of jalapenos and hot sauce.

I have to say that I was disappointed in this. Seemed creamy and not cheesy and lacked flavor. Don’t think I went wrong anywhere and actually had a touch more cheese (3 cups) than the recipe called for and put it in because I didn’t have use for it. I’m still not entirely sure I didn’t screw up somewhere, but if not, definitely a little disappointing. Wish the recipe had weights so I could double check what I did.

Very tasty and a bit rich. Halved for two of us. The blend of cheese, bacon, and tomatoes was good. Would make it again for a group, but make ahead, and just warm up and skip the broiler.

Could not decide between this recipe a similar beer-cheese dip. Slight difference in recipes swapping beer for sour cream. Both had bacon. I went with Melissa's since she's never wrong. But swapped 1/4 cup of the sour cream for 1/4 cup Guiness. Added some jalapeno that was getting old in the fridge, and a small jar of pimentos instead of the tomatoes/salsa. Spectacular and dangerous because we devoured it. And the big game is still an hour away, LOL.
