At a ceremony in Manchester on February 5, the Michelin Guide announced which new restaurants in England, Wales, Scotland, and Ireland snagged a spot in this year’s guide. This year 18 restaurants received their first star. Six new restaurants received two stars, and just one restaurant received three—the highest honor Michelin awards.

The Ledbury, a fine dining spot in London’s Notting Hill that boasts a £210 tasting menu before wine (roughly $265), was added to the exclusive ranks of three-star restaurants—a rare addition to Michelin’s most prestigious category. The nine existing three-starred restaurants retained their spots. Among the six newly minted two-star restaurants were Gymkhana in London and Birmingham’s Opheem, the first two-starred Indian restaurants on the UK's list.

The one-star category, as usual, saw the greatest number of new entrants. The 18 additions include the izakaya tasting counter Humble Chicken and West African spot Akoko, both in London, and The Bishop’s Buttery, serving upscale Irish fare in the town of Cashel.

London, home to more Michelin-starred restaurants than any other city within the UK guide’s bounds, perennially dominates the list. This year, 16 of the 25 new awardees hailed from the UK's capital. And, of the nine restaurants in the exclusive three-star club, six are in London.

Last week, Michelin announced 20 new Bib Gourmands, a slate of restaurants deemed “great value”—in other words, less expensive—compared to those in the main star guide. Three courses at a Bib in the UK and Ireland must cost a maximum of £30 (roughly equivalent to $36.68), before drinks. The Bib designation is also intended to invite a more diverse range of cuisines into the Michelin universe, which has sometimes been criticized for a lack of diversity in its starred guide. This year’s Bibs include Ichigo Ichie Bistro & Natural Wine, a Japanese bistro in Cork, Ireland; Empire Empire, a London restaurant serving Punjabi and Northwest Indian cuisine; and the Bristol-based pub The Clifton.

Six restaurants received Green Stars this year. The category, introduced in 2020 with the intent of rewarding commitment to sustainability, welcomed a new set of environmentally focused spots, including Annwyn in the town of Narberth in Wales and Exmoor Forest Inn located in Simonsbath, a small English village.

Jakes Jones of Forge in Middleton Tyas took home the Young Chef award. Robbie Ashby of Exeter’s Stage received the Service Award for standout hospitality. Meanwhile, Valentin Mouillard took home the Sommelier Award for his work at the three-starred farm-to-table tasting spot L’Enclume; and Ryan McHarg took home the Exceptional Cocktails award for his bar program at The Spence.
