Inspired by viral videos, this Viral Cottage Cheese Chocolate Peanut Butter Ice Cream will be your new favorite treat. This "Ice cream" is high in protein, naturally sweetened and incredibly easy to throw together. All you will need are 5 pantry staple ingredients and a blender. Who knew cottage cheese could transform into a chocolatey, peanut buttery delicious sweet treat? This better-for-you dessert is sure to be a favorite!

I have been seeing this everywhere and honestly it turned out amazing! I can’t wait to make it again! Plus you can customize it any way you like! 

You’ll need:
1 cup cottage cheese
2 eggs
seasoning of choice (I used 1/2 tsp Italian) 

1. In a blender, combine cottage cheese, eggs and seasoning until smooth. 
2. Transfer to a quarter sheet pan lined with parchment paper.
3. Bake at 350F for 35 minutes.
4. Let cool completely, make a wrap or sandwich (I’m using avocado, spring mix, tomato, chicken and balsamic vinegar).

Sauce:
1 cup blended cottage cheese (place in food processor or blender until smooth)
1 cup shredded cheese or choice
1/4 cup water or milk
Paprika
Salt
Pepper
Garlic Powder

One 12oz packet of elbow noodles (you can use chickpea noodles for more protein + fiber)

1. Boil water and cook noodles 
2. Blend cottage cheese
3. Add cottage cheese, shredded cheese, spices, and milk or water to a pan over medium heat 
4. Mix until cheese melts and sauce is blended (do this over low heat so it doesn’t separate)
5. Add cooked noodles and mix until well coated
