Chicken stir-fry is old news – it’s time to mix it up. This simple taco recipe is rich in both protein and fibre to promote muscle growth and repair. What’s more, those black beans will do wonders for your digestion.

Ingredients

  • ¼ avocado, mashed
  • ½ garlic clove, very finely chopped
  • Juice of ¼ lime
  • Salt and freshly ground black pepper
  • 1 soft taco shell
  • ¼ cooked chicken breast, sliced
  • 1 tbsp black beans
  • ½ handful shredded purple cabbage
  • Couple of red onion slices
  • 1 jalapeno, sliced

              Method

              1. Mix together the avocado, garlic, lime juice and seasoning to make a guacamole.
              2. Load your guac on to the taco.
              3. Top with the rest of the ingredients, snap for the 'gram, and enjoy every bite.
