Is there any better sentence than ‘we're having tacos for dinner’? We don’t think so. Especially when they’re as delicious as the ones in this easy tofu taco recipe.
We’ve switched out the usual corn tortillas for a homemade version using red split lentils and lupin flour, which means they’re gluten-free and packed with protein. Lupin flour, which is made with ground lupini beans (yellow-coloured beans usually found in Mediterranean countries) is also high in protein, three times higher than quinoa, in fact. Winner-winner taco dinner!
To make the smoky, sweet ‘n’ spicy filling for these tacos, you'll be using everyone's favourite bit of kitchen kit – an air fryer. Using an air fryer allows the chunks of marinated tofu to get extra crispy and delicious and provides the perfect vehicle for the zesty cabbage slaw.

Ingredients
For the lentil tacos
- 125 g
red split lentils
- 375 ml
hot water
- 1/4 tsp.
salt
- 1/2 tsp.
dried mixed herbs
- 4 Tbsp.
lupin flour
For the crispy chipotle tofu
- 300 g
extra-firm tofu
- 1 Tbsp.
olive oil
- 4 tsp.
cornflour
- 1 1/2 tsp.
smoked paprika
- 4 tsp.
chipotle paste
- 2 Tbsp.
honey
For the coriander and lime slaw
- 300 g
yoghurt
- 15 g
fresh coriander
- 1
lime, juiced
- 1/2
white cabbage, finely sliced
To serve
- 1/2
red onion, finely sliced
Fresh coriander leaves
Lime wedges
Directions
- Step 1In a large bowl, add the lentils, hot water, salt and mixed herbs. Stir, cover and set aside for 2 hours.
- Step 2When you’re ready to make the tacos, add the lentil mix to a food blender along with the lupin flour. Blitz until smooth and glossy.
- Step 3Place a large non-stick frying pan over a medium heat and brush with a little oil. When the pan is hot, add two tablespoons of batter to the frying pan. In a circular motion, use the back of a spoon to push the mixture out into a thin pancake. Cook for 2 minutes or until the top of the taco is dry and peels away from the pan. Flip and cook for a further 2 minutes. As you cook the tacos, keep them wrapped in baking paper to keep them soft.
- Step 4To make the tofu, preheat the air fryer to 200°C. Break the tofu into rough nuggets and place them into a large bowl along with the olive oil, corn flour and smoked paprika. Stir until the tofu pieces are evenly coated and add to the air fryer in one even layer. Cook for 18-20 minutes shaking well at 10 minutes.
- Step 5Meanwhile, add the sliced cabbage to a bowl and set aside. To make the coriander and lime slaw, add the yoghurt, coriander and lime juice to a blender and blitz until you have a green sauce. Pour over the cabbage and slice until combined.
- Step 6Serve the lentil tacos topped with tofu, slaw, red onion, coriander leaves and a good squeeze of fresh lime juice.
