If you're after a sweet, filling treat, look no further than these healthy flapjacks. Filled with high-fibre ingredients, we also added apple for some sweetness. Go wild with the toppings, and swap out mix seeds and flaked almonds for anything - we also love chopped dried apricots, coconut flakes, and dried blueberries.
Step 1Cover dates with boiling water and soak for 30 mins.
Step 2Preheat the oven to 190ºC (170ºC fan) and lightly grease and line a 20.5cm (8in) square tin with baking parchment.
Step 3In a large bowl, mash the banana with the back of a fork. Coarsely grate the apple and add to the bowl. Mash the dates with the back of a fork and add to the bowl with the honey and syrup. Mix well. Add the oats, almonds and seeds and mix until well combined.
Step 4Tip the mixture into the prepared tin and spread to level. Brush with egg white then sprinkle over your chosen topping, pressing it gently into the mixture. Bake for 25 minutes until golden brown and slightly firmer.
Step 5Remove from the oven and slice into 12 equal rectangles whilst still in the tin. Allow to cool completely in the tin.
