Chickpea salad sandwich recipe

Ingredients
- 2 Tbsp.
lemon juice
- 2 Tbsp.
vegan mayonnaise
- 1 Tbsp.
soy sauce
- 1 Tbsp.
nutritional yeast

400g tins of chickpeas, rinsed
- 2
celery sticks, finely chopped
- 1
spring onion, finely sliced
- 8
cornichons, finely chopped
- 15 g
parsley, finely chopped
- 8
slices of whole-grain bread
- 4
lettuce leaves
- 1/2
a cucumber
cucumber, peeled into ribbons
- 300 g
cress
Directions
- Step 1In a large bowl, whisk together the lemon juice, mayonnaise, soy sauce, and nutritional yeast. Add the chickpeas and mash, leaving some larger chunks. Fold in the celery, spring onion, cornichons, and parsley.
- Step 2 Assemble sandwiches with bread, lettuce, chickpea mixture, cucumber, and cress.
