Peanut butter and banana waffles

These fluffy, crisp waffles come together easily in the blender: Just blitz, cook, and eat (and repeat).

Ingredients
- 1
large ripe banana
- 120 ml
milk
- 125 g
natural yoghurt
- 65 g
smooth peanut butter
- 2
large eggs
- 1 Tbsp.
maple syrup
- 120 g
plain flour
- 1/2 tsp.
bicarbonate of soda
- 1/4 tsp.
salt
- 1 Tbsp.
chia seeds
Directions
- Step 1In a blender, blitz the banana, milk, yogurt, nut butter, eggs, and syrup. Add the flour, bicarbonate of soda, and salt and blitz again to combine. Stir in the chia seeds.
- Step 2Cook the waffles according to your waffle machine's instructions and top with your favourite toppings.
Prep Power: There are two options here. Either make and refrigerate the batter for up to four days or make and freeze the prepared waffles. Freeze in a single layer on a baking tray until firm, then freeze in freezer-safe bags or containers for up to three weeks. Ready to eat? Reheat in a toaster until hot and crisp or in a frying pan over a medium heat, turning once.
