Ingredients
- 1
large egg
- 450 g
skinless salmon fillets, finely chopped
- 2
spring onions, chopped
- 1
jalapeño, finely chopped
- 3 Tbsp.
fresh coriander, chopped and divided
flaky sea salt and pepper
- 1 Tbsp.
olive oil
- 140 g
Greek yogurt
- 1 tsp.
lime zest plus 2 tbsp juice
- 4
brioche buns, toasted
- 8
lettuce leaves
- 1/2
a cucumber, shaved into ribbons lengthwise
- 150 g
cress
Directions
- Step 1In a medium-sized bowl, beat the egg with a fork until frothy. Fold in the salmon, spring onions, jalapeño, two tablespoons of the coriander, half a teaspoon of salt and a pinch of black pepper.
- Step 2Heat the oil in large nonstick saucepan over a medium heat. Spoon four equal-sized mounds of the salmon mixture into the saucepan and flatten into half-centimetre-thick patties. Cook until golden brown for two minutes on each side.
- Step 3Meanwhile, in bowl, combine the yogurt, lime zest and juice, remaining coriander, and a large pinch of salt and pepper. Spread onto the buns, then top the bottom buns with lettuce, salmon patties, cucumber, and cress before sandwiching with the top buns.
