Chef notes

This is a traditional Goan recipe that is so simple to make with just a handful of ingredients, but it really packs a punch of flavor. It's such a versatile way to use up leftover chicken or turkey from the day before. The serving options are so varied that it can make for a tasty lunch, side dish or dip!

Technique tip: You can use an electric hand whisk to shred the chicken quickly. It is easier to shred the chicken when warm, so heat in the microwave for about 30 seconds before shredding.

Swap option: You can use Greek yogurt with some olive oil instead of mayo to make this higher in protein and lower in calories. You can swap the chicken for any protein of your choice (cooked white fish, boiled eggs, grated tofu). You can also use your leftover turkey at Christmas or Thanksgiving time in this recipe.
