Technique tip: This can be made in advance (the night before). If you're making ahead, keep all the elements separate and assemble the tart just before serving to ensure the pastry stays crisp. Make sure not to over whip the cream — it's better to under whip it and then slowly use a manual whisk to reach the desired consistency.

Swap option: You can use other fruit that's in season, such as peaches or berries, even diced mango would work well.
