Saffron vanilla fruits with yoghurt

Serves 4


Find good dried fruits at health-food stores and big supermarkets.

Poach gently with saffron, cinnamon and vanilla, and serve with a dollop of yoghurt and crushed pistachios.

250ml white wine
500ml water
150g soft brown sugar
1tsp vanilla extract
1 vanilla bean, split lengthwise
2 cinnamon sticks
Broken pinch of ground saffron
1tbsp grated lemon rind
200g dried figs, halved
200g dried apricots
200g dried pitted prunes

METHOD

Combine the white wine, water, sugar, vanilla extract, vanilla bean, cinnamon sticks, saffron and lemon rind and bring to the boil, stirring until the sugar has dissolved.

Add the figs, apricots and prunes, and simmer gently for 30 minutes until soft and swollen.

Remove the fruits and boil the poaching liquid until reduced by half, then return the fruits to the syrup.

Serve warm or at room temperature.
