1.3kg piece belly pork
1tbsp olive oil
1tsp sea salt
½tsp freshly ground black pepper
700g purple sprouting broccoli
METHOD
Preheat the oven to 230C/Gas 8. Score the skin of the belly pork at 1cm intervals, right to the edges. Rub with olive oil and then rub the sea salt and pepper all over the skin and the meat. Place the pork on a rack, and bake for 20 minutes.
Reduce the oven to 200C/Gas 6 and bake for a further 45 minutes. If the crackling isn’t crisp enough, slice it off in one piece and return to a higher heat in the oven for 15 minutes while you rest the pork meat under foil. Steam or simmer the broccoli for 4 minutes or until tender; drain well.
To serve, cut out any bones on the base of the pork, slice and serve with the crackling and broccoli.
