Recipe exchange: warm salad

Salads don’t feel quite right in colder weather, but Sophie Williams, of East London, has come up with this warm variation that is healthy but still works as comfort food.

Ingredients
2 sweet potatoes
3 parsnips
1 butternut squash
2 red peppers
1 yellow pepper
Cooked chorizo ring (about 200g)
200g feta cheese
Salad leaves (spinach, watercress, rocket)

Method
1 Chop large-ish cubes of the sweet potatoes, butternut squash, parsnips and peppers and put them in the oven at 200C/gas 5-6 with some olive oil, pepper and Maldon sea salt for 40min.

2 Chop up some chorizo, add it to the veg, toss to cover in seasoning and olive oil, then cook for a further ten minutes.

3 Serve on a bed of salad, with the feta cheese crumbled on top. If you have a vegetarian in the family simply leave out the chorizo — it still tastes delicious.
