Make raspberry ice-cubes to chill this drink ahead of time

Make raspberry ice-cubes to chill this drink ahead of time by placing raspberries in an ice-cube tray, topping up with water and freezing overnight.

Children aged 4+ can help to wash and hull the fruit and then push them through the sieve. You may have to finish this, as it takes a while to get all the pulp through the sieve, leaving only the pips.

Preparation time: 20 mins

Serves 4

200g raspberries
100g castor sugar
100ml water
2 lemons, juiced
chilled sparkling water

Wash the raspberries and place them in a non-metallic sieve over a clean bowl.

Using a tablespoon, push all the fruit through the sieve until all of the fruit pulp is in the bowl underneath.Discard the rest.

Mix the sugar and water until dissolved: add the lemon juice.

Add to the raspberry pulp and share between four glasses, top up with sparking water, a raspberry ice-cube and serve. (About a third pulp to two thirds water)
