Serves 6

Butter or coconut oil, for greasing
6 large ripe plums, halved and stones removed

For the batter
50g ground almonds
1 tbsp coconut flour
2 tbsp maple syrup
3 eggs 200g full-fat double cream or coconut cream

1Preheat the oven to 220C/Gas 9 and grease a 23cm-diameter flan dish with butter or coconut oil.

2 Whizz all the batter ingredients together in a blender or food processor until smooth or whisk by hand in a bowl.

3Pour the batter into the prepared flan dish and arrange the plums, cut side up, on top. If you can’t fit them all in, neatly chop them to fit.

4 Bake in the oven for 15 minutes until risen and golden brown. Serve warm.
