Serves 4
1 portion basic pizza dough
125g mascarpone cheese
30g fresh strawberries, hulled and sliced
150g fresh raspberries
5 bunches fresh redcurrants
2 tbsp caster sugar
Fresh mint leaves
Icing sugar, to dust
1 Preheat the oven to 200C/Gas 6.
2 Roll out the pizza dough until you have a 20cm circle. Transfer to a nonstick baking tray and allow to rest for 10 minutes.
3 Spread the mascarpone over the base and transfer to the oven. Bake for 5 minutes, scatter over the strawberries and raspberries and cook for a further 3 minutes. Then remove from the oven.
4 Dip the redcurrants in a little cold water and then the caster sugar, and arrange on top of the pizza.
5 Garnish with the mint leaves, dust with the icing sugar and serve.
